Spinach asparagus with chickpeas - Recipe

Hello, my friends, I hope you are well, it is a pleasure to be in this beautiful community again, today I want to share with everyone a delicious vegan recipe, with chickpeas and spinach, I love chickpeas, I could eat them every day, I think Everything we prepare with chickpeas is perfect haha, creams, salads, stews, desserts, everything, plus their nutritional properties are many, they provide many benefits to our health and prevent some diseases, and well spinach is Wonderful, today I share with you the recipe for Esparagados de spinach con chickpeas, let's get started.

Spinach asparagus with chickpeas


Ingredients:

  • 250 g of cooked or canned chickpeas.
  • 2 Cups of spinach.
  • 2 cloves of garlic.
  • 1 medium onion.
  • Three slices of bread.
  • Olive oil.
  • Salt, cumin, paprika powder, everything to taste, oregano.
  • A teaspoon of apple cider vinegar or normal vinegar.
  • Nuts, optional. I used a little bit of walnuts.
  • 3/4 cup of water.

Preparation:

1- Add the whole garlic, in a pan with olive oil, sauté the garlic, when they are golden brown, remove from the heat and set aside.



2- In the same oil, fry the bread slices on both sides until golden, and set aside along with the garlic.


3- Chop the onion into small squares, and sauté, add a touch of salt, paprika powder, sauté for a few minutes and then add the spinach, let it cook over medium heat, until it reduces in size.



4- Next we add the chickpeas and a touch of oregano. We let it cook for a few minutes, while we make the cream with the bread and garlic.


5- For the cream, add the garlic, bread, water, teaspoon of vinegar, and walnuts to the blender and blend until obtaining a homogeneous mixture. (If you see that it is very thick, add more water).


6- We add the previous mixture to the chickpeas, and let it cook for approximately 10 minutes. We taste the sbor4s, if necessary we add a little more salt.


7- After the cooking time has passed, we remove it from the heat, serve and enjoy this delight of flavors, this cream with the bread and garlic is crazy, everything is truly exquisite.
