This is a beautiful community, and I'm always happy to post my content here ❤️ This time, I've brought a fruit & chocolate cake that is moist and soft for everyone to enjoy a piece of sweetness with an incredible citrusy-vanilla-chocolate aroma 😁
The texture of the cake is super important to please the party guests. And although this party is virtual, this is no less important.
...Then I made sure to choose well among the few but substantial ingredients I had at home: a mix of wheat flour and homemade coconut flour--I made myself--, citrus fruits to soften the crumb of the cake (really important because we aren't using any eggs for obvious reasons), cinnamon and vanilla to enhance the delicious fruity scents, and bitter chocolate to give the contrast of flavor that pleasantly surprises our taste buds to make us sigh at every bite.
I was inspired and felt like adding fresh grapes. What a good decision.
This is the kind of cake children and adults like and if you want to make it gluten free, just use twice as much coconut flour and add a cup of cornstarch and half a cup of coconut oil.
INGREDIENTS
Cake:
- 3/4 cups pitted grapes
- 50 gr dark chocolate bits
- 75 gr margarine (salted)
- 3/4 cups brown sugar
- 1 1/2 cup all purpose wheat flour
- 3/4 cups (homemade) coconut flour
- 3/4 cups (homemade) coconut milk
- 1 teaspoon ground cinnamon
- 3 teaspoons vanilla essence
- 3/4 cups fruit sauce 👇
Fruit sauce 👇 - 1 cup freshly squeezed orange juice
- 4 tablespoons freshly squeezed lemon juice
- 1 cup diced red apple
- 2 cups chopped pineapple
- half a cinnamon stick
- 2 tablespoons orange peel
Chocolate Glaze:
- 1/2 cup (homemade) cane honey
- 1/4 cup cocoa powder (unsweetened)
- 1 tablespoon margarine (salted)
- 1 tablespoon coconut oil
Garnish:
A few grapes in their bunch, a couple of orange slices, a couple of green cherries, and of course, a birthday candle.
THE PROCESS
I started out with the fruit sauce. I needed it cool for the cake mix.
With the help of a fork, I squeezed the oranges...
I peeled and diced the apple and added it into the cooking pot, along with the sugar, salt, half a cinnamon stick (broken), and some orange peel I finely chopped. It'd cook over medium heat while I took care of the pineapple.

It took about 10 minutes, just enough time for the apple chunks to become tender. I took them out and used the same syrup to cook the pineapple (I was using a small saucepan).
While the fruit sauce was cooling, I started making the cake mix.
First, I mixed the margarine, sugar, and coconut oil. After it became creamy, I added the coconut milk, the last bit I had in the fridge.
I mixed it well until it looked homogeneous.
I added the ground cinnamon and vanilla essence and mixed well.
Now it was time for the flours.
I sifted the wheat flour in the bowl and immediately after it, I added the coconut flour.
I folded it until it became a paste.
I added the fruit sauce without most of the sauce.
It was time to add the sauce... I went little by little & mixing every time.
I added the baking soda & some lemon juice to incorporate air into the mixture. Then I mixed it well again...
Finally, it was time to grease a baking pan to pour in the cake mix and bake this cake
I used the one for pies. It had the right size.
The mixture went into the greased baking pan.
Now only the grape & chocolate chunks were missing.
I chopped the chocolate, pitted and chopped the grapes...
And covetred the cake with them.
The cake baked for 70 minutes at 300° F in my little electric oven.
Chocolate Glaze 🙃
I used what I had, and the result was good.
I mixed the cane honey and cocoa powder, then added the last bit of coconut oil, and brought the mixture to a simmer over medium heat, stirring constantly for 5 minutes.
Then it was ready to be spread on the cake.
The rest is history... Some grapes and orange slices for garnish, acouple of cherries... and a little b-day candle ❤️
Estoy gratamente sorprendida por esta receta, pues es increíblemente variada en técnicas e ingredientes, dando como resultado un pastel bonito, delicioso, yo diría que épico. De veras, me ha alegrado mucho verlo, así sea en la recta final del concurso, ¡que bueno que no te perdiste el celebrar el cumpleaños vegano de este año!
El uso de la frutas está súper acertado, porque las incluyes tanto en el bizcocho como de decoración, además, ese chocolate tan único y de tanta calidad, como es el Savoy, realmente una armonía de sabores.
Agradezco mucho tus bonitas palabras, especialmente porqué sé que eres una persona con mucha trayectoria en Hive, y una gran chef. Gracias por ser parte de la familia vegana.

Soy fan de las tortas que llevan frutas frescas! Para mí son irresponsables y la tuya se ve hermosa con las frutas que elegiste para decorar y estoy segura que con todos esos ingredientes de calidad, especialmente el cacao de Savoy está torta quedó para comerse más de un trozo! Jeje

What a delicious cake, I love the combination of orange and chocolate, but this one has more than that. It looks very tasty, also very pretty with that grapes garnish, the lit candle makes it stand out more in a beautiful and eye-catching dish.

Quedó suavecito y la piña fue la mejor parte. Va súper bien con el chocolate; yo creía que no, pero sí. Las uvas también, al pelo. Hay que repetirla 😋
