First of all, Happy Anniversary to all three of you! You guys look so cute next to your elegant master 😆

Bananas have been the best ally for me when it comes to "difficult" flours and bagasse, because they add a lot of creaminess and when they are unripe, they even make quite fluffy breads. Vinegar along with coconut milk add softness and the baking soda gives air to the batter. I think I'm already chewing a little piece of these muffins and I love it!
