Recipes evolve over time and everyone has their own improvisation in making their recipes. Like me who rarely uses wheat flour in my snacks but I use substitute ingredients that taste much better and healthier. In addition, over time, new recipes will be created that we will get like the recipe I will share here.
The ingredients I need to make this snack are:
1. 250 grams of potatoes
2. 100 grams of oatmeal (I use this oatmeal as a substitute for wheat flour, but if you don't have oatmeal you can use wheat flour with the same measurements)
3. 50 grams of tapioca flour
4. Spring onions to taste
5. Shallots about 2 to 3 cloves
6. Garlic 1 to 2 cloves
7. Chili to taste or can be replaced with pepper
8 1/2 tablespoons of salt
9. Coriander powder approximately 1/2 tablespoon
And now let's make the snack with the following steps
1. Because these potatoes are small in size, I wash them until they are really clean, then I boil them until soft, then I drain them until cold and I peel the skin, then I smooth them using a ladle
2. The next step is to put the oatmeal in the same container as the potatoes
3. After that, the next ingredient that goes in is the tapioca flour..then stir slowly
4 and so that I don't forget, I put in the coriander powder first
5. Then I put in half the salt first
6. The next step is to clean the spices that will be ground such as shallots, garlic, and chilies, don't forget to wash them first. After they are clean, add a little water then blend until smooth
7. Then after they are smooth. Put the spices in a container that already contains the previous ingredients, stir until smooth and don't forget to correct the taste whether you think the taste is right on your tongue or not and for the texture, don't let it runny. Because this dough will be formed into small balls.
8. The last ingredient I put in is I roughly chop the spring onions then I stir until smooth
9. After that take a little bit of the dough then form it into small balls like I did this and my hands are also clean and I have smeared a little vegetable oil so that the dough does not stick
10. After making the balls then arrange them in the steamer and after all the dough is formed steam until Boiling for approximately 7-10 minutes
11. The dough will look sticky but when we pull it using a fork it doesn't stick at all
12. Serve with chili sauce or any sauce you like. And I added a sprinkling of chili powder on top of my potato balls then I dipped them in tomato sauce and chili.
