De acuerdo a los estándares de alimentación los vegetales forma parte importante en esta. Incluir vegetales es tan necesario que para muchos aún adultos se niegan a hacerlo, pretextos y más pretextos para no incluirlo en el día a día.

Cuando ya deben incluirlos en el día a día lo consideran una dieta porque el médico me lo así me lo indicó, lo ven como medicina y no como un cambio en el estilo de alimentación.
Al contrario, hay personas que para ellos es un encanto incluir los vegetales en su alimentación diaria. Es para la gran mayoría reconocer las vitaminas y minerales que cada vegetal ofrece al consumirlo.

Hoy comparto vegetales cocidos que semanalmente o quincenalmente adquirimos para completar nuestras comidas diarias. En este día incluí: brócoli, berenjena, zanahoria.

Today I share cooked vegetables that we purchase weekly or biweekly to complete our daily meals. On this day I included: broccoli, eggplant, carrots.

La mitad de un brócoli grande, aproximadamente 1/2 kilo
1 zanahoria mediana
1/4 de cebolla morada
Perejil al gusto,
1/4 de cucharadita de sal
1/4 de cucharadita de cúrcuma
1/4 de cucharadita de orégano
1 pizca de pimienta de cayena, me gusta porque da un sabor muy delicioso (no excederse)

Half of a large broccoli, approximately 1/2 kilo.
1 medium carrot
1/4 red onion
Parsley to taste,
1/4 teaspoon salt
1/4 teaspoon turmeric
1/4 teaspoon oregano
1 pinch of cayenne pepper, I like it because it gives a very delicious flavor (do not overdo it)

Cortar la berenjena como lo prefiera, en este caso se cortó en cubos, se llevó a un envase, se colocó un poco de sal y agua para remojarla por unos minutos.

Cut the eggplant as you prefer, in this case it was cut into cubes, took it to a container, put a little salt and water to soak for a few minutes.

Cortada la zanahoria(como prefiera) cebolla morada y perejil, se llevó a un sartén a fuego muy bajo tapado por unos minutos para que con el vapor genere líquido.
Al pasar los minutos, se le agrega la berenjena, se tapa y se deja que con el vapor se cocine.

Cut the carrot (as you prefer), red onion and parsley, put it in a frying pan over low heat covered for a few minutes so that the steam generates liquid.

After a few minutes, add the eggplant, cover and let it cook with the steam.

Mientras, aparte se lava muy bien el bròcoli, cortado en prequeos trozos, sus arbolitos lo màs pequeño que se pueda. En espera que la berenjena estè cocida, bien blanda.

Se incorpora el bròcoli, se le agrega el orègano, la sal la curcuma, todo se une para que tome el sabor de las especies que se usaron, se revuelve muy bien... se tapa por unos minutos, mientras el bròcoli se cuece un poco.

Ya finalizado el proceso de cocción, se sirve, listo para comer. Se puede acompañar con la carne de su gusto. O simplemente, solo vegetales.

Delicioso para almorzar o cenar y como prefiera acompañarlo.

It can be served with the meat of your choice. Or simply, just vegetables.

It's interesting that people would rather cook meat for 2 hours than prepare something like this in a very short time + is much healthier! As it is easy to prepare and easy to digest, it can be eaten even for dinner, like you said!
