Howdy!
After many days of not being active since my last post, here I am again sharing a vegan dish that you might like to cook. This is really a simple dish... a kind of sweet and salty but delicious vegan meal. For as long as they are available in the market, I buy them. They have a reasonable price at the moment, this bunch cost 2.49 Euros/ 2.67 USD. That is because the asparagus that is dominating now in the market were imported. It was reported yesterday that the market is overloaded with these veggies and that pressurized the prices of the local produce.
Some of the local farmers decided not to harvest their asparagus because of the cost of labor and they can't compete with the current market prices of the imported ones.
Vegan Green Asparagus
Ingredients
1 bunch of green asparagus
olive oil
teriyaki sauce
soy sauce
1 tablespoon vegetable stock
1 teaspoon stevia powder (or sugar)
salt
pepper
Preparation:
1... Cut the lowest part of the asparagus that is hard then steam them in a steamer filled with water between 6-8 minutes (depending on their thickness) until they become tender . Remove from the steamer and immediately place in a bowl of water with ice cubes. The cold water with ice cubes will help the pieces retain their green color.
2... In a hot pan with 2 tablespoons of olive oil, stir fry the asparagus coating each piece with the oil, then sprinkle 2 teaspoons of soy sauce. Afterwards, add 1 tablespoon of the teriyaki sauce, 2 tablespoons vegetable stock (or 2 tablespoons liquid vegetable cube which had been diluted before in water).
Sprinkle 1 teaspoon of stevia powder (sugar will also do).... let the liquid boil a bit then make a test if the taste suits fine according to your preference. Since the teriyaki sauce is a bit sweeter in taste, choose whether you still want to add the stevia powder (or sugar). Adjust the salt and pepper. Remove from the heat and keep warm until serving.
