This is my first post ever!
Guess the secret ingredient used in this plant based delight. Hint: it's green, quite crunchy and locally grown.
Did you guess it right? Yes! Its elephant grass locally known as achara! Eating well while supporting local farmers? Yes, please!
Did you know okra helps regulate blood sugar level and boosts immunity? And achara helps with improving sleep and health?
Cook Okra vegetable soup with me. But this time, it's spicyyy🔥
Why would you love this dish?
- It is quick and easy and abd does not take more than 45 minutes to makes
- It is 100% plant based and is not only satisfying but also nutritious to the core.
- The ingredients are locally sourced and fresh.
What you'll need to know:
Disclaimer: there is really no specifics to the ingredients. So, just work with your cooking sense but i would infact put in the prices of what i bought.
Any where you see "Achara", kmow I'm referring to elephant grass
List of ingredients:
A handful of okra seeds
200 naira pepper
200 naira achara (elephant grass)
200 naira uziza leaf
Salt (to taste)
Red oil (palm kernel oil)
Let's get to cooking with meso!
- Preparation:
Wash the pepper, leaves, elephant grass and okra.
You can blend or grind your pepper. I grind mine with a local mortar and pestle
Cut the okra or grind it (whhchever one. But grinding it gives you more slimy effect while cutting it leaves with chewable okra).
Mine is blended
- Start cooking
Pour in 2 cups water (less or more depending on your quantity of ingredients). Add your red oil and let it boil for like 5 minutes.
- Continue:
After sometime, add your okra, salt, pepper, achara and wait to boil together for 10 minutes. When it's time, add your uziza leaf (or desired vegetable leaf)
4: Finish:
Let it boil for 2 minutes or just bring it down immediately if you think it's slimy enough.

You can either eat the soup as a dish ir eat it with garri like I did. Better still, fufu the one that is more widely known
Tips:
If you don't like slimy okra, cut it instead. Amd add more water when cooking.
The Achara added is option and only added as a substitute for meat.
This plant based meal is packed with nutrients and flavour fueling your body and nourishing your soul.
