Warm greetings to everyone here and happy Sunday today I made our local delicacy called African black beans/cowpeas Akidi Igbo this is a special type of beans it is relished as a native delicacy and contribute significant to the meal in the south Eastern part of Nigeria.
And this African black beans is very proteinous in nature and I have to combine it with carbohydrates food which is cassava flacks.
Cassava flacks is meal gotten from cassava.
I have to combine them together to get a very healthy meal carbohydrates and protein is a very good combination and healthy too.
INGREDIENTS USED
2 cups of African black beans
1/4 paint of cassava flacks
1/4 cup of red oil
1/2 big onion
Salt to taste
1/2 tablespoon of Pepper
Water.
PROCEDURE
I will first select my African black beans and parboil it by cooking for some minutes and wash.
I will now put my food back into my pot and cook I will allow my African black beans to be soft I will now start putting ingredients.
I will now start putting my ingredients
I will put my salt, wash and slice my onions and put I will also put my red oil and my pepper.
I will allow it for some minutes I will now add my cassava flacks .
I will give my food a good stirring.
Here my food is ready.
