Hi everyone and happy Sunday today is Sunday and in my house we always eat rice because is Sunday my kids thinks that Sundays are for celebration, they are correct somehow because after church service we always stay at home both daddy and mummy are always at home on Sundays and visitors also come on Sundays.
Even if we decide to go out it will be occasion or going outing with the kids that is why they see Sunday as a day of celebration.
So this Sunday I decided to change the story by cooking a different thing but still rice but not rice and stew this time is coconut rice and I want my coconut rice to look attractive I have to make it fried with veggies so that it will look attractive.
INGREDIENTS USED
3 cups of rice
2 coconut
Salt to taste
10 piece of Green beans
1 Green pepper
2 pices of Carrots
1/2 spoon full Turmeric
1 spring onions
1/2 cup of Groundnut oil
5 piece of red pepper
Water.
Note: one of the coconut is for dishing out the rice.
PROCEDURE
In a clean pot I will put my rice and add water and cook after 15 minutes I will bring it down and wash.
While waiting for the rice I will cut my coconut and bring out the water.
After cutting the coconut I will bring them out from the shell.
After bringing them out I will wash them and cut into pieces.
After that I will use my hand blender and blend the coconut.
After blending I use my filter and filter them and bring out the water from the coconut.
After washing the rice I will put my rice back into the pot and add my coconut water and the milk together.
After putting the coconut water and is not okay you can add water. This one I add water.
After putting water I was my spring onions and slice.
I also wash my green beans and green pepper and slice them and set them aside.
I also pound my pepper.
After slice my spring onions I add to the rice and add salt to taste.
After that I add my pepper and turmeric.
After putting your turmeric you stir very well and cover your pot and allow your rice to be soft as you want.
Once my rice is done I will dish them out because I will use the same pot to fry.
After dishing the rice out I will allow the pot to dry water and I will put my groundnut oil.
After putting the groundnut oil I will allow to get hot I will now add my slice green beans, green pepper and carrots and fry.
After I add my rice and stir.
With this process your yummy yummy coconut rice is ready.
Looking at this rice you will see that it looks delicious and tempting. I enjoyed this rice very well.
