A few days ago on my Facebook page I received a suggestion for a Sicilian recipe for fennel salad, since I had bought some fennel at a discount I decided to try it, the Sicilian version was not vegan but with anchovies and olives as well as fennel and oranges so I decided to make my vegan version with walnuts instead of anchovies and I guarantee it was delicious!
For this recipe you will need:
- 2 fennels
- 2 oranges
- 60 grams of pitted walnuts
- 60 grams of iceberg lettuce
- 4 tablespoons of salt
- 4 tablespoons of olive oil
- 4 tablespoons balsamic vinegar
First, wash the iceberg lettuce and place it in a large bowl. Then we clean the fennel, cut off the stems and cut the fennel into strips as thin as possible, add them to the bowl on top of the salad.
Then we take the oranges, peel them and cut them into segments, the segments can be left whole or cut into pieces, add them to the bowl, now season the salad with oil and salt and mix all the ingredients well, finally add the walnuts and mix again then finish to season with vinegar, a delicious salad different from usual but very tasty! Enjoy your meal

Hace unos días en mi página de Facebook recibí una sugerencia de una receta siciliana de ensalada de hinojo, como había comprado un poco de hinojo con descuento decidí probarla, la versión siciliana no era vegana pero con anchoas y aceitunas además de hinojo. y naranjas así que decidí hacer mi versión vegana con nueces en lugar de anchoas y te garantizo que quedó riquísima!
Para esta receta necesitarás:
- 2 hinojos
- 2 naranjas
- 60 gramos de nueces deshuesadas
- 60 gramos de lechuga iceberg
- 4 cucharadas de sal
- 4 cucharadas de aceite de oliva
- 4 cucharadas de vinagre balsámico
Primero, lava la lechuga iceberg y colócala en un bol grande. Luego limpiamos el hinojo, le cortamos los tallos y cortamos el hinojo en tiras lo más finas posibles, las añadimos al bol encima de la ensalada.
Luego cogemos las naranjas, las pelamos y las cortamos en gajos, los gajos se pueden dejar enteros o cortar en trozos, las añadimos al bol, ahora sazonamos la ensalada con aceite y sal y mezclamos bien todos los ingredientes, por último añadimos las nueces. y volver a mezclar para luego terminar de condimentar con vinagre, ¡una deliciosa ensalada diferente a las habituales pero muy rica! ¡Disfrute de su comida!
