Good evening hivers, here I am again, my health is not yet the best and since in the last few weeks I think I have also neglected my diet a little, tonight I decided to cook myself a simple and light dish without many sauces. Lately, due to the sore throat and tiredness, I have often cooked simple broth or sandwiches and quick things, today I decided to cook some vegetables I had in the fridge in a simple way.
For this recipe you will need:
- An aubergine
- Two carrots
- 200 grains of cabbage
- 500 ml of vegetable broth
- three tablespoons of turmeric
- two tablespoons of fine salt
Very simple and genuine ingredients. First let's deal with the vegetables, clean them all with running water, make sure they are clean well, peel the carrots, for the aubergine we can peel it or not, I decided not to do it, cut it into washers and then into cubes more or less all of the size same size, also cut the carrots into rounds.

Últimamente debido al dolor de garganta y el cansancio he cocinado muchas veces caldos sencillos o bocadillos y cosas rápidas, hoy he decidido cocinar unas verduras que tenía en la nevera de forma sencilla.
Para esta receta necesitarás:
- Una berenjena dos zanahorias
- 200 granos de col
- 500 ml de caldo de verduras
- tres cucharadas de cúrcuma
- dos cucharadas de sal fina
Ingredientes muy simples y genuinos. Primero vamos a ocuparnos de las verduras, limpiarlas todas con agua corriente, asegurarnos de que estén bien limpias, pelar las zanahorias, para la berenjena podemos pelarla o no, yo decidí no hacerlo, cortarla en arandelas y luego en cubos. Más o menos todas del mismo tamaño, cortar también las zanahorias en rodajas.
Then we prepare a pot with the vegetable broth and salt, turn on a low heat and let it cook until we see the water boiling, after which we throw the previously prepared vegetables into the pot and let them cook for about half an hour, stirring occasionally, finally drain them from the broth and serve them. As soon as they are ready, serve with a sprinkling of turmeric and enjoy a simple and healthy dish!
