Today I will show you one of the easy and simple recipes for making eggplant. This can replace you enjoying non-vegan dishes at home. Well, being inspired by social media made me have to try this dish at home.
I also want to take part in the challenge from Hive Top Cheff with a vegan theme this time. This is something extraordinary, I am used to serving vegan food even though I am not a vegan. It would be fun to follow the theme this time, although it is far from perfect with simple dishes.
At first I was hesitant about what dish I wanted to serve, but my choice was eggplant. Because in my opinion, eggplant's texture will be very similar to meat if it is processed into a perfect dish, right?
Raos Eggplant
It is one of the popular dishes in my country made from eggplant, it is very easy to make and there are even lots of similar recipes. This eggplant raos is processed crispy eggplant with a combination of spicy and sweet sauce. So the delicious taste combines perfectly with the crunchiness and tempting sauce. Well, today I will show you this simple recipe!.
Materials Used
- 3 small purple eggplants
- 4 tablespoons wheat flour
- 3 red chilies
- 3 green chilies
- 5 cloves of red onion
- 2 cloves of garlic
- 1 stalk lemongrass
- 2 tablespoons sweet soy sauce
- 1 teaspoon mushroom stock
- 1 spoonful of salt
Cooking Procedure
I prepared the eggplant then cut the eggplant thinly at an angle.
Cut as thinly as possible and do this until all the eggplant is finished. Then wash the eggplant with clean water two times.
Then add one spoonful of salt and stir until evenly mixed. And let it sit for 5 minutes so that the salt is absorbed.
While waiting for the eggplant, we prepare the flour for frying, prepare the wheat flour then mix it with enough water.
Stir well until it has a thick texture, now the eggplant is ready to be fried by applying it to the wet flour. Dip in flour then fry until golden brown. Do this until it's finished and the eggplant is ready to use.
Preparing To Make Sauce
Now, after the eggplant is finished, it's time for me to prepare the raos sauce. Chop the shallots and garlic, cut them thinly, or according to your taste.
Then cut the chilies into small rounds. Do the same for both chilies.
Saute the shallots and garlic in a little oil, add the lemongrass, stir-fry until fragrant and slightly wilted.
Then, add the chili pieces and cook for a while or until the chilies start to wilt.
Then season with sweet soy sauce, granulated sugar and powdered stock.
Cook again then add salt, cook and see the sauce thickens, turn off the stove then add the fried eggplant, stir both until evenly mixed.
Results
Serve eggplant raos when you are confused about what to cook at home. Just look at how you will spend a lot of portions in one meal. Usually I enjoy this eggplant raos with warm white rice at home.
Crispy eggplant, with a combination of sweet, spicy and slightly salty sauce will add the perfect blend of flavors. For those of you who don't like dishes that are too sweet, you can skip the granulated sugar and just use soy sauce for your diet which is low in sugar. Well, it's very easy, isn't it? Try making it at home.
