Easy Way To Cook Lotek Genjer

Genjer is a vegetable that has a bitter original flavor, but there are many ways to make this vegetable less bitter and become a delicious food that is perfect for various dishes served at home. It's not the first time I've shared a genjer recipe with you, I've previously made stir-fried genjer vegetables It doesn't taste bitter at all but has a more savory and delicious taste.

Different from the previous stir-fry genjer recipe, I will share with you one of the special recipes that may be unfamiliar to you, namely processed genjer which is boiled and then given a delicious peanut sauce. This processed genjer is known as Lotek Genjer.




Lotek Genjer

Lotek Genjer is one of the traditional food dishes originating from one of the regions in Indonesia, namely the Sunda region. This lotek genjer recipe is indeed almost similar to gado-gado, it's just that there is a slight difference that lotek is made simpler than gado-gado. So it is very easy and anyone can easily be prepared. Now usually lotek is prepared with a stronger flavor than hodgepodge, namely the addition of shrimp paste. However, since I prepared a vegan version, I prepared it without adding the shrimp paste. I only added palm sugar and lime juice as complementary ingredients that strengthen this peanut sauce.




Ingredients

2 bunches of genjer
50 grams of peanuts
10 grams palm sugar
1 clove of garlic
1 clove shallot
½ lime
4 chili peppers




Cooking Procedure


Step 1


2 bunches of genjer I clean I cut and take the young genjer part I cut into several parts.

Step 2


After cutting, wash the genjer vegetables thoroughly, then heat the water and let it boil.

Step 3


After boiling add the genjer vegetables, stir and cover briefly for about 1 minute, let it go then remove and drain the genjer.

Step 4


Fry the fried onions until brownish yellow set aside first, then fry the peanuts briefly.

Step 5


And add shallots, garlic and chili until everything is fry and brownish yellow.

Step 6


If it has been fried grind the peanuts and onions manually with a cobek. Add salt well you can also grind it with a chopper try not to be too fine.

Step 7


While grinding I add palm sugar and lime juice. Stir everything until evenly mixed.

Serving Suggestion

Lotek Genjer is ready to be served on a serving plate of genjer stew that has been squeezed after the boiling process. Then pour with peanut sauce then add fried onion tomato pieces and celery leaves on top. Then feel the sensation of a delicious blend of genjer which has a slightly bitter taste with the sweet and savory peanut sauce which is indeed a perfect blend.

Lotek genjer is really a delicious genjer preparation in my opinion. It's a simple version of genjer but has a spectacular flavor. I really like this combination, the flavor is very belen, it's nice to find other ethnic foods that are suitable for my tongue.
