You will need:
For 3 servings
● 1 fresh broccoli (approx. 330 g. after cutting the florets off the stem)
● 1 onion
● 3 garlic cloves
● 750 ml. of water together with 1,5 cubes of vegetable stock (check the packaging - it should be one cube per half litre of water unless written differently)
● 200 ml. full-fat coconut milk (solid part (cream) from the can)
● 2 tablespoons of olive oil
● 1 tablespoon of nutritional yeast flakes
● ¼ teaspoon of ground pepper
● Fresh parsley

Preparation
1.Wash the broccoli and cut off the florets from the stem and the part of the stem that is still a little soft, which can also be cooked together.

2.Chop the onion and garlic.

3.Put the oil in a saucepan and heat it. Add the chopped garlic and onion and fry in the pot for a few minutes until soft.

4.Add the broccoli to the pot, add the water and vegetable stock cubes. Once everything has come to the boil, cook for another 15-20 minutes.

5.Once cooked, leave to cool slightly, add the pepper and nutritional yeast. Puree the soup with a hand or other blender until smooth. Add the coconut milk to the pot and blend again.

7.Serve with fresh parsley, seeds or bread of your choice.
