You will need:
For 1 serving
● Choice of lettuce (I used 90 g. Iceberg lettuce (approx. two large leaves))
● 80 g. of well-ripened mango
● Cucumber (approx. 50 g.)
● ΒΌ small onion
● 6-7 small tomatoes
● Half of a small avocado
● Optional: fried tofu ("marinated" type, pan-fried with spices)
● Fresh coriander or parsley

For the dressing:

● 20 g. of peanut butter without additives
● 1 teaspoon of fresh grated ginger
● 1 tablespoon of soy sauce
● 0,5 teaspoon of garlic powder
● 30 ml. water or plant-based milk without sugar
● 1 tablespoon of lemon juice
● ΒΌ teaspoon of ground pepper
● ΒΌ teaspoon of salt (or more, to taste)

Preparation
1.If using tofu, cut it into cubes or strips and fry it in oil on all sides, along with a little of your chosen spices until browned.
2.Tear or chop the salad of your choice. Chop the cucumber, mango, onion and tomatoes.

Cut the avocado in half, slice diagonally with a knife and remove with a spoon.

  1. Grate the ginger with a small grater.
  2. Prepare the dressing by blending all the ingredients for the dressing with a hand or other blender. Blending is not necessary, but it will help to mix everything together and the grated ginger will be better crushed.

    5.Place all the vegetables, herbs and tofu, if using, in a bowl and mix with the sauce.
