This is a simple snack that I make for many different occasions but I think it best fits for Easter since it kind of looks like deviled eggs 😁
There are a lot of recipes of these deviled potatoes on social media now and all of them are very similar but you can add any additional spices to make them best for yourself! 🌻
You will need:
10 small / medium-sized potatoes
2 tablespoons of plant-based mayonnaise
1 teaspoon of mustard
1 teaspoon of apple cider vinegar
1 tablespoon of nutritional yeast
¼ teaspoon of salt (can be replaced by black salt “Kala Namak” to give some egg flavor)
0.5 teaspoon of turmeric powder
0.5 teaspoon of smoked paprika powder
Fresh dill/other herbs
Preparation:
Put all the potatoes in a pot with cold water and bring to a boil. Boil on low heat for about 15 minutes. You don't need to peel the potatoes, just wash well before boiling!
Remove the boiled potatoes from the water and leave to cool.
Cut each potato (set aside one potato for the filling) in half lengthwise and carefully take out the middle (approximately one teaspoon) where the filling will be placed. Put the scooped part of potatoes aside as it will be mashes for the filling.
Mash the part scooped out of potatoes with a fork together with the remaining one potato after peeling it. Add all the remaining ingredients to the mixture and mix well until it is smooth.
Put the filling in each of the potato - the mixture can be placed in a pastry tube for cream / icing and squeezed over the potatoes. But you can just put it with spoon as well.
Sprinkle some chopped fresh dill on top and enjoy!
