Aluva sweets recipe.

Wishing you all a wonderful and joyful day! Today, I prepared a delightful Sri Lankan snack that celebrates the rich culinary traditions of our culture. Sri Lankan cooking is known for its vibrant flavors, making it a perfect choice for both festive occasions and everyday tea-time gatherings. This particular recipe is a cherished addition to the table, especially when hosting guests, as it brings people together with its warm and inviting taste. Known as Aluva, this treat is made using a mixture of rice flour, jaggery, and coconut milk. For convenience, I substituted sugar for jaggery in this version. What makes this snack extra special is that it’s homemade—ensuring cleanliness and a natural taste free of artificial additives. It's simple to prepare and a perfect way to share the joy of traditional flavors with your loved ones.

Materials Used.

Moist white rice flour 400g .
Sugar 200g.
Coconut milk 400ml.
1/2 teaspoon of salt.

The cooking process as follows.

First, take a cooking pan and place it on low heat. Add the rice flour to the pan and gently roast it over low heat until it changes color. Once it reaches a light golden hue, remove it from the heat and set it aside.

Next, take another cooking pan and add the coconut milk to it. Then, mix in the sugar and 1/2 teaspoon of salt. Stir well to combine all the ingredients evenly.

Now, place the pan on the stove and cook the mixture while stirring continuously. Allow it to thicken slightly into a sugar syrup consistency. Once it reaches the desired texture, remove it from the stove.

Next, set aside about 5 tablespoons of rice flour separately. Take the remaining rice flour and gradually add the sugar syrup to it. Mix well, adding the syrup little by little, until fully incorporated. Once the mixture is ready, spread the reserved rice flour onto a tray to prevent sticking. Pour the prepared aluwa mixture into the tray and flatten it evenly to form a thin layer.

Next, sprinkle the roasted rice flour evenly over the flattened aluwa mixture. Spread it across the surface to coat it well. Then, cut the mixture into pieces of your desired size and shape while it's still soft.

So, you don’t need to be an experienced chef to prepare this simple recipe. You can personalize it by adding cardamom, cashews, or dried fruits to make it uniquely yours.
