Wishing a very good day to all my dear friends! How are you all doing? This morning, I prepared a nutritious grain dish – red cowpea. It's a healthy meal that can be enjoyed both in the morning and evening. This recipe is especially suited for vegetarians as it’s rich in essential nutrients. Red cowpea is packed with protein, fiber, vitamins, and minerals, making it an incredibly nutritious option. It aids in quick digestion and also contains folic acid, which is beneficial for growing children as well. I prepared this dish as a fry, adding several spices to enhance the flavor. Let’s explore how to make this nutritious and delicious red cowpea recipe!
Now, finely chop the onions, green chilies, and garlic.
Materials Used.
100g of well-washed red cowpea soaked for about 6 hours.
1/2 teaspoon of Cumin.
3 Tablespoon of coconut oil.
Salt as needed.
1 Teaspoon of Mustard seed.
2/1 Teaspoon of crushed chili powder.
Curry leaves.
1 Onion.
4 cloves of garlic.
2 green chili pods.
Water 400ml.
The cooking process as follows.
Now, let’s get ready to prepare this delicious recipe. First, take a pot and add about 400ml of water along with the soaked red cowpeas. Place it on the stove and add about half a teaspoon of salt. Let it cook for about 30 minutes until the cowpeas are well-cooked and tender.
Now, finely chop the onions, green chilies, and garlic.
Now, take another pan and place it on the stove. Add about 2 tablespoons of coconut oil. Once the oil is heated, add mustard seeds and cumin, mixing them well. Then, add the chopped garlic and onions, and stir everything together until combined.
Next, add the curry leaves and chopped green chilies to the pan. Mix everything well together, allowing the ingredients to combine thoroughly.
Next, add the cooked red cowpea, chili powder, and a pinch of salt to the pan. Mix everything well together, allowing the spices to blend. Once fully combined, remove the pan from the heat.
So, this nutritious red cowpea dish has been prepared in a traditional Sri Lankan style. It's an excellent option for both breakfast and dinner. I hope you all try making it this way as well.
