Adding garlic to the recipe introduces a unique twist to the flavor, making it even more delicious. Preparing garlic-flavored Murukku at home not only ensures a delightful snack but also allows you to enjoy it free from artificial additives. Materials Used.
Rice flour - 1 cups.
Chickpea flour - 1/2 cup.
About 10 garlic cloves, peeled.
1 Teaspoon of chili powder.
Coconut oil for frying.
Curry leaves.
Salt as needed.
Water 1/2 cup.
The cooking process as follows.
First, take a mixing bowl and add the rice flour and chickpea flour. Mix them thoroughly until well combined, and set the mixture aside for later use.
Now we need to crush the garlic properly. For this, use a mortar and pestle to finely crush the garlic cloves until smooth.
Now, add 1/4 teaspoon of salt to the crushed garlic, along with 1/2 cup of water, and mix thoroughly. Then strain the mixture using a sieve to remove any solid particles, leaving behind a smooth garlic-infused liquid.
Next, add 1 tablespoon of coconut oil, 1/4 teaspoon of salt, and the prepared garlic mixture to the combined rice flour and chickpea flour mixture. Mix thoroughly until the ingredients are well incorporated. Then knead the mixture into a smooth dough, ensuring it is pliable and easy to handle.
Next, take a piping bag and fill it with the prepared dough mixture. Set it aside for later use.
Next, take a pan and place it on the stove. Add enough coconut oil for deep frying. Once the oil is hot, use the piping bag to carefully pipe the dough into the pan in desired shapes, as shown in the pictures. Fry until the pieces turn golden brown.
Meanwhile, fry the curry leaves until crispy.
Finally, add chili powder, salt powder, and the fried curry leaves to the prepared Murukku and mix well.
