Lentil curry is a staple food in most Sri Lankan households and many South Asian countries. It is cherished for its rich flavors, creamy texture, and high nutritional value. Made with protein-rich lentils, aromatic spices, and coconut milk, this dish is both delicious and nutritious. For this recipe, I have used kadala parippu (chickpea lentils). It pairs perfectly with rice, roti, or bread, making it a versatile addition to any meal. So, let's dive into the step-by-step process of preparing this delightful dish! 😊
Materials Used.

large Dhal 200g.
Water.
3 Tablespoon of coconut oil.
1 Cup of coconut oil.
1/2 Teaspoon of fenugreek seeds.
1 Teaspoon of Mustard Seeds
2 Teaspoon of tamarind juice.

1 Teaspoon of chilli Powder.
2 Teasppon of curry Powder.
Salt to taste.
Two dried chili peppers, broken into pieces.
A little chopped onion.
2 Chopped green chilli pods.
A piece of cinnamon.
1 Pandan leaves.

The cooking process as follows.
Now, let's get ready! First, wash the lentils thoroughly, clean them well, and place them in a pot. Add a small amount of coconut oil and set it on the stove to simmer.
Next, transfer the simmered lentils into a separate bowl.
Next, place the same pot used to cook the lentils back on the stove and add about two tablespoons of coconut oil. Once heated, add fenugreek seeds, mustard seeds, garlic, and onions, and sauté them until fragrant and lightly golden. Then, add curry leaves, dried chilies, and green chilies, stirring well to enhance the flavors.
Next, add chili powder, curry powder, and turmeric powder to the mixture. Stir well to combine all the spices evenly, allowing their flavors to blend together beautifully.
Next, add the tempered lentils to the mixture and stir well once again, ensuring that all the ingredients are evenly combined. After that, add the coconut milk and mix well.
Finally, when the coconut milk has slightly thickened, add the tamarind, mix well, and let it cook for another 2 minutes. Then, remove it from the stove.
Thus, this uniquely prepared parippu curry is not only delicious but also packed with essential nutrients that promote overall well-being.
