Good day to all my Hive friends! How are you doing? Today, I prepared a delightful treat—a plum cake—and I am excited to share it with you. Plum cake is often associated with festive occasions and celebrations. Its rich flavor and moist texture make it a beloved dessert for all age groups. Traditionally, plum cakes include eggs as a primary ingredient, but this version is eggless, making it suitable for vegetarians as well. Preparing an eggless plum cake opens the door to enjoying this classic dessert in a way that’s inclusive and equally delicious.

Materials Used.

1 Cup of Sifted wheat flour.
1 Cup of coconut milk.
1/2 Cup of Naran juice.
1/2 Cup of sugar.
1/2 Cup of Powdered sugar.
1/4 cup of coconut oil.
3 Table spoon of hot water.
1 Teaspoon of Baking powder.
1/2 Teaspoon of baking soda.
1 Teaspoon of Cinnamon powder.
Some wiyali midi.
Dry fruit pieces.
Chopped cashew nuts.

Method of making....

First, take a cup and combine dried raisins, mixed dry fruit pieces, and cashew nut pieces. Add a splash of orange juice to the mixture and stir well. Cover the cup and set it aside to soak.

Next, let's prepare the sugar caramel. Place a pan on the stove and add the required amount of sugar. Allow the sugar to melt and turn into a golden caramel. Once the caramel reaches the desired color, carefully add about 3 tablespoons of hot water. Stir gently for a few moments until fully combined, then remove the pan from the heat and set it aside to cool slightly.

Next, we need to prepare the cake batter. Take a mixing bowl and add the coconut milk to it. Then, add the wheat flour, powdered sugar, and coconut oil. Mix everything thoroughly until you get a smooth and lump-free batter.

Next, add the baking powder, baking soda, cinnamon powder, and the soaked dried fruit mixture with orange juice to the batter. Finally, incorporate the caramelized sugar mixture prepared earlier. Mix everything thoroughly until all the ingredients are well combined, creating a uniform and rich cake batter.

Meanwhile, prepare a cake pan by lining it with parchment paper. This will make it easier to remove the cake once baked and ensure it doesn’t stick to the pan. Make sure the paper fits well and the edges are smooth for a clean finish.

Now, I’m going to bake the cake using a rice cooker. Pour the prepared batter into the lined cake pan or directly into the rice cooker bowl, depending on your setup. Set the rice cooker to the "bake" or "cook" function and allow it to bake for about 45 minutes, or until a toothpick inserted into the center comes out clean.

Finally, remove the baked cake from the rice cooker and allow it to cool for a few minutes. Carefully take it out of the pan, then slice it into pieces and serve. Enjoy your delicious and moist plum cake!
