If you're a fan of flavorful and easy-to-make curries, then you're in for a treat with this simple Ladies' Finger Curry recipe. Also known as Okra Curry this vegetarian dish is bursting with spices and has a delightful tangy twist. Get ready to enjoy the combination of tender ladies' fingers (okra) and aromatic spices that will leave you wanting more. Let's jump right into the recipe!
Ingredients:
250 grams of fresh ladies' fingers (okra), washed and cut into bite-sized pieces
1medium-sized onions, finely chopped
1medium-sized tomatoes, finely chopped
2 green chilies
2 pinch of curry leaves
3-4 cloves of garlic, minced
1 teaspoon mustard seeds
1 teaspoon turmeric powder
1 tablespoon coriander powder
1 teaspoon red chili powder (adjust according to your spice preference)
Salt to taste
3 tablespoons cooking oil
Instructions
First wash and clean the okra and cut in to the bite size pieces
Add chopped onions, garlic, green chilly, tomato, curry leaves to the sliced ladies fingers.
And next add turmeric powder, coriander powder, red chili powder, and salt. Mix well and keep a side.
Heat the cooking oil in a large pan over medium heat.
Add mustard seeds to the hot oil and let them splutter for a few seconds.
And then you can add the ladies fingers spicy mixture
Reduce the heat to low, cover the pan with a lid, and let it cook for 15-20 minutes. Stir occasionally to prevent sticking.
Turn off the heat and transfer the Ladies' Finger Curry to a serving dish.
Serve hot with steamed rice, roti, or naan. It also goes well with plain yogurt or raita.
This is delicious. I miss eating okra or lady fingers. Reminds me of the Philippines. We also cooked the same way when we don't have electricity.
