Cassava Leaf Vegetables with Coconut Milk

How are you all, I hope your days are always enjoyable, yesterday I shared a recipe on how to make a very simple cassava snack using only 3 ingredients, but now I will share how to cook cassava leaves with coconut milk, usually I cook this when the weather is cold, like now, in our place it's the rainy season, as usual in previous years, the end of the year in our place will be
greeted with floods everywhere hehehhe, yeah that's how it is here, sometimes the flood can even reach the chest of an adult, usually when a flood occurs we evacuate to high houses, and some also evacuate to Menasah, but Alhamdulillah I have a stilt house, a house inherited from my grandmother who has passed away,so I don't have to bother going to evacuation hehhee

Cassava leaves are leaves from cassava tubers that can be processed into any vegetable for Indonesian cuisine, usually we only pick young cassava leaves, then I process them into delicious vegetables by adding spices that are in my house, and coincidentally the vegetables grow in front of my house which were planted by my mother, so I just picked them in front of the house, for my lunch menu today which is very simple, friends, but it's okay even though it's simple but very delicious on my tongue and I'm sure on all of your tongues it's also very delicious, especially if eaten with your favorite salted fish, you can add rice many times, okay I'll share my simple recipe.

Ingredients

2 bunches of curly cassava leaves
1 grated coconut
5 cloves of shallots
2 cloves of garlic
8 pieces of cayenne pepper
1 piece of turmeric
1/2 coriander

How to cook

  • First, blend the shallots, garlic, coriander, turmeric, cayenne pepper until smooth, then blend the grated coconut to get the coconut milk. Why do I use a blender? It's faster and saves time. The coconut milk that comes out is also more than if I squeezed the coconut milk directly by hand.

  • Next, add the finely ground spices, along with the coconut milk, into the pan, then cook, don't forget to stir so that the coconut milk doesn't curdle and don't forget to add salt for flavor.

  • Cook until done, indicated by the cassava leaves becoming softer. Once cooked, turn off the stove and the cassava leaf coconut milk is ready to be enjoyed.

My cassava leaf recipe with coconut milk is ready, and can be enjoyed immediately with the family, I really like this leaf vegetable, especially my child, he is a lover of coconut milk sauce, usually when I cook this vegetable my child immediately moves quickly to eat it even without fish, he really likes it, I also deliberately cook it not spicy so that he can eat it hehhee
