This purple eggplant with white flesh is very popular among Indonesian people, and so do I, who really like this purple eggplant, so today I came home from work and my stomach felt very hungry. I opened the food cover and it turned out there was no food, so I just made my own delicious, tasty and simple food. It so happened that there were 2 purple eggplants in the refrigerator so I thought of making my own grilled eggplant with Jimbaran spices.
Jimbaran seasoning itself comes from the Balinese people, the Balinese people are very happy if they are made grilled shrimp with Jimbaran seasoning, but because I don't have shrimp, I made grilled eggplant with Jimbaran seasoning, hopefully it's delicious, friends, because you know this is my first time making grilled eggplant with Jimbaran seasoning, I've eaten it at a restaurant but it wasn't eggplant but shrimp, because the original recipe is shrimp, hehee.
Why did I choose eggplant instead of shrimp, besides there was no stock of shrimp at home, I assumed that purple eggplant cooked with any spices would still be delicious, right? Whether fried, grilled, in chili sauce, in shrimp paste, even boiled or used as a salad, it would still be delicious, so I'm sure grilled with Jimbaran spices would also be very delicious.
Okay, here is the method and ingredients that I use to make grilled eggplant with Jimbaran spices.
Grilled eggplant with Jimbaran spices
The ingredients I use are quite easy to get, made from purple eggplant, chilies, onions, ground coriander, ground pepper, and candlenuts.
Materials used
3 cloves of shallots
1 clove of garlic
5 large red chilies
8 cayenne peppers
1/2 tsp mushroom stock
1/2 tsp coriander powder
1/2 tsp salt
Manufacturing procedure
Wash the eggplants thoroughly, and cut them into 3 pieces, or according to your taste. Don't cut them too thickly, or the inside won't cook properly.

Sprinkle the eggplant with salt, mushroom stock, and coriander powder, then bake on a non-stick teflon pan, don't forget to turn it over, bake until half cooked only, because later we will bake it again until cooked, after applying the seasoning.

Puree the spices with a blender, then saute with a little cooking oil until cooked, until the spices are dry and the oil comes out. Don't forget to add a little salt or sweet soy sauce, but I don't use soy sauce, just salt

After the spices are cooked, spread the spices on the eggplant, then grill again until completely cooked. It doesn't need to be long, about 3 minutes is enough, because the spices are already cooked and the eggplant is also half cooked.

RESULTS
The Jimbaran grilled eggplant is ready, as I predicted, it tastes really good, the seasoning is spicy and very tasty, making me want to add more rice, who would have thought that not only shrimp can be cooked with Jimbaran seasoning, eggplant is also very delicious

The rice was gone without any leftovers, eaten just like that without rice is also very delicious, anyway I am very satisfied with my cooking this time, try making this eggplant once, I guarantee you will definitely be addicted to trying it again.
If you have an air fryer, you can just use an air fryer. I don't have an air fryer so I just baked it using a non-stick frying pan.
