How to fry rice noodles so they are chewy and don't break, no need to boil them first

Indonesians never get bored with this one dish, especially noodle dishes. Various kinds of noodle dishes are our favorites, well this time I will cook my own favorite fried vermicelli

Fried vermicelli is a noodle dish that is no less delicious than regular instant noodles, but rather than eating instant noodles too often, it's better to cook fried vermicelli once in a while which can also be mixed with our favorite vegetable toppings, here I use carrot and bean sprout vegetable toppings, coincidentally carrots and bean sprouts are available at home, besides vegetables you can add other toppings such as shrimp, sausage, tempeh, eggs, meat and many more, because I want to cook a vegan version so I don't add meat and eggs, just with my favorite vegetable toppings.

How to cook vermicelli is also very simple, no need to boil the noodles so that the noodles remain chewy and not white, just soak them in warm water, that's how I cook vermicelli, this was taught by my mother, she often cooks vermicelli in this way,
Now rather than being curious, let me start cooking fried vermicelli. And I will share the recipe with all of you.


Ingredients,

3 pieces of rice vermicelli
1 carrot cut into matchsticks
100 grams of bean sprouts
1/2 tomato
Sweet soy sauce
Salt soy sauce
Chili sauce
Salt
Spring onions


Ground spices

10 cloves of shallots
1 clove of garlic
4 cayenne peppers/to taste
4 candlenuts
sufficient pepper powder


manufacturing procedure


First


Soak the rice noodles in warm water until they are soft and chewy, approximately 10-15 minutes.

Puree all the spices using a blender until completely smooth.

Third


Saute the ground spices with a little cooking oil, until completely cooked until the oil comes out or until you can smell a fragrant aroma.

Fourth


After the spices are cooked, add the vegetables first, carrots and bean sprouts and add a little water, then cook until the vegetables are cooked.

Once the vegetables are half cooked, add the vermicelli. Don't forget to add the soy sauce, sauce and salt.

Once the vermicelli is cooked, remove it and serve it on a serving plate. As a complement, add lettuce and chili sauce.

Yes, this is how I cook fried bihin, it tastes spicy, delicious and the noodles are very chewy, the spicy sensation comes from the whole chili that I added earlier. It is very suitable to be eaten just like that or as a side dish with rice, it is also very delicious.

Usually I cook this rice vermicelli in the afternoon as a snack when my husband comes home from work, he always asks me to make this rice vermicelli, that's why I often cook rice vermicelli, before dinner time we eat the rice vermicelli first hehehe
