This time I want to make a typical cake from my area with papaya fruit.
Regional specialties are foods that have certain characteristics in a region, well one of them is timpan cake which is a special food from Aceh, if you visit Aceh you will find this food very often, many coffee shops sell this food,

Timpan is a soft cake wrapped in young banana leaves made from glutinous rice flour with grated coconut filling, usually the most famous timpan is filled with srikaya, but this time I want to make this timpan with ripe papaya, coincidentally I was given a ripe papaya by my sister-in-law yesterday, so rather than not eating it, I'd rather process it into this delicious timpan cake.Instead of being curious, let's immediately make a timpan cake recipe from papaya fruit.

Ingredients for making dough

1 coconut to extract the coconut milk
1 medium papaya
500 grams of glutinous rice flour

Enough banana leaves to wrap the cake, and make sure you choose young banana leaves because if the banana leaves are old it will be very difficult to wrap it.

Ingredients for the filling

1 grated coconut
100 gr white sugar
1 lump of brown sugar
Salt to taste

How to make

  • First, I cooked the papaya mixed with coconut milk

  • Once the papaya is soft, put the papaya in a large tray to make it easier to make the dough.

  • After the papaya has cooled, add the glutinous rice flour little by little while kneading.

  • Knead the dough until it is smooth and ready to be shaped.

  • Put the grated coconut, granulated sugar and brown sugar into a pan and cook until dry until the coconut changes color.

  • Then prepare young banana leaves, brush on a little cooking oil so the dough doesn't stick to the leaves.

  • Next, take the dough and flatten it on a banana leaf that has been smeared with cooking oil, then add the roasted coconut, then wrap it slightly lengthwise or according to taste.
