Vegan Recipe- Cauliflower Paturi with Gourd Leaves



Friends, Happy Friday everyone.

Today's environment is very nice, besides I am at home all day today, so I had a nice time. If I am at home, I can spend my time very well, because I spend time in my vegetable garden only when I am at home. Actually, spending time in your garden has a different feel to it. My vegetable garden is getting pretty good.

Today I collected some gourd leaves from the vegetable garden. Where I tried to show my garden scene. I collected gourd leaves from the garden with my own hands. It really adds a different feel to harvesting something from your own garden.

So today, since I am at home, I collected some gourd leaves from my garden and made cauliflower paturi. Paturi with vegetables is a very popular and favorite dish in our region. So, it can be a great tasting item for vegan lovers. Hope everyone will like this recipe today.

Paturi is a special type of recipe, vegetables are mixed with various spices, then they are fried between leaves. In this case, many people twist the leaves into yarn and fry them in little oil for a while, which is very tasty to eat.

Required Materials-

  • Cauliflower - 200 grams
  • Gourd leaves 7
  • Rice powder 50 grams
  • 1 onion
  • 2 green chillies
  • Coriander leaves 10 grams
  • Mustard paste 2 tsp
  • Turmeric powder 1/2 tsp
  • Chilli powder 1/2 tsp
  • Cumin powder 1/2 tsp
  • Coriander powder 1/2 tsp
  • Salt 1/2 tsp
  • Oil 4 teaspoons
  • Yarn as needed


Preparation phase-

First, I took the cauliflower and then cut some parts from it and put it in a plate. Cauliflower cannot be cut too small or thick here.

Then cover with a lid to boil the cauliflower pieces with required water, turmeric powder, chilli powder and salt.

After that I spread the boiled cauliflower with rice powder, turmeric powder, chili powder, coriander powder, cumin powder, salt, chopped onion, mustard paste, green chillies and oil.

Then I took a gourd leaf, put the cauliflower mix on its side and fried the leaf from all sides and stuck it with thread. In this way I have twisted all the leaves.

Then I put the pan on the stove and heated it with oil, then put the leaves one by one, cover it with a lid for some time.

Then remove the lid and turn them upside down and fry both sides well for some time, then take them down.

This is a special and popular dish of our region, paturi made with cauliflower and gourd leaves. Many people make this paturi with different types of vegetables.

In our region we usually eat this type of paturi with hot rice and flour bread, you can eat them as breakfast with any salad, but the great taste will impress you.
