In this case, I am very glad that you were able to buy the potatoes and onions at such a good price, because sometimes it is difficult to buy vegetables at a reasonable price (well, where I live the vegetables are very expensive).
Sometimes, when I get good prices, I buy a lot of carrots and potatoes, and what I do is clean them with a cloth slightly moistened with water and vinegar, to remove the dirt and give them extra protection. Then I wrap them in paper, it can be newspaper, I put them in plastic bags and place them in the bottom of the fridge. I check them weekly, dry them and change the paper. This has allowed me to store them in good condition for almost 4 months.
Regarding the recipe, that idea of stuffing onions with potatoes is great, the flavor must have been delicious. I really like the truth.

Oh wow thank you for such nice words. It is extra welcome at a time when my partner and I have been told that our workplace will close at the end of next week. Therefore I will take your advice on how to keep these items fresh for longer. I'm not used to getting things in large amounts so I didn't know that. I will bring the rest of the potatoes and onions home after this week.
