I use eggplant, but have to chop it fine to hide it from my family. but I may try this as a nice spread on crackers.

Yes, the aubergine is not for all tastes, although it camouflages itself very well with the rest of the flavors, it is very versatile. I hope you can try it, you won't regret it πππ
