Ingredients :
Potatoes - 2 pcs
Eggplant - 5 pcs
Chilli paste - 5-8 pcs
Bay leaves - 2 pcs
Salt - 1 teaspoon
Turmeric - 1 teaspoon
Cumin - As needed
Oil - As needed
The Methods of making :
First I took 5 eggplants and 2 potatoes. I love eggplant so took more of it. Take as you need.
Cut each eggplant into small pieces. Cut the potatoes into 5-6 pieces. The thinner the vegetables are, the better they will boil and fry.
Add oil to the pan. Heat oil on medium heat.After the oil is hot, add cumin as required. Fry cumin for 30 seconds.
After frying cumin keep it aside in another bowl.
Then fry the vegetables.
Add the vegetables to the pan, then add 1 teaspoon tumeric.Tumeric will make the color of the curry attractive.
Add water as needed. No need to add extra water.Cover the pan for 2-3 minutes. By this time the vegetables will be boiled.
Keep the pan on medium heat. I made a paste with 5 green chillies and then added the paste to the pan. Not everyone likes chili. So take chili as per your requirement.
Take 2 bay leaves. Tear them in half. There will be 4 pieces after tearing. Then add it to Pan. Bay leaves will give extra flavor to the curry. Then I used 1 teaspoon salt.
Keep the curry in the pan for another 2 minutes on medium heat.Then take it down.
Then take it down.Now it is ready to serve. This is how you can make this very easily.It is a healthy dish and also delicious to eat.
