Enjoy this cold December with a hot cup of coffee or hot tea, 'Halapa', a wonderful sweet treat.

How are you,Good evening my dear friend to all. As usual, I wish you a very beautiful and prosperous day. Would you like to try a new recipe this cold December? If you get these ingredients, try making them yourself. This is called rice flour halapa. It is not a strange dish for us Sri Lankans. A dish that we always make and taste. Most of the time in every Sri Lankan home, at least once a week, this sweet Halapa is made and tasted for tea. So let's see how to make it.

Ingredients;

  • 300g of rice flour
  • Half cup of sugar
  • Half cup of karakkan flour (finger
    millet flour)
  • 30ml of water

  • A cup of grated coconut
  • A teaspoon of salt powder
  • 70ml of warm water
  • Three crushed cardamom pods

The method of making;

First of all, fry the halpi on low heat for about 5 minutes until fragrant.

Then you need to caramelize the sugar. Add two table spoons of sugar in a suitable container and caramelize it well.

After that add two tablespoons of hot water and mix well.

Now add crushed cardamom to it.

Add 1/4 teaspoon of salt powder and mix well.

Now add the rest of the sugar and melt it well on low heat.

Now keep the flame on the stove at normal level and add the grated coconut and stir well for about three minutes.

Transfer to another bowl to cool down.

Now let's prepare the flour mixture. For that, add fried rice flour, kurakkan flour and 3/4 teaspoon salt powder and stir.

Knead the flour mixture well while adding warm water little by little.

The flour mixture will be moist to the touch and will be easy to thin out.

Let's prepare small balls from this flour mill.

We Sri Lankans traditionally use this 'Kendha' leaf shown in the picture to make Halapa. For us Sri Lankans, it is very easy to find. According to the new method, it is made in banana leaves. Otherwise, use a similar type of leaf that is suitable for you.

Wash and clean these leaves and then apply oil.

Now take one small ball and flatten it as shown in the picture.

Now take some of the coconut nectar mixture and thin it on one side as shown in the picture.

Fold now. It will be clear to you from the image.

Steam these halapa for twenty minutes only. A rice cooker is handy for that.

Pack the helapa well and steam for twenty minutes.

Cover the lid with a piece of cloth to prevent water from dripping onto the halapa during steaming.

These Halapa are very fragrant. Halapa is a very delicious sweet dish that you can enjoy with a cup of hot tea and a cup of hot coffee.
