A friendly greeting to the whole Plan Power (Vegan) community. This is the first time I find myself among you sharing a food recipe. I hope that from now on there will be many more occasions when we can meet with healthy topics for everyone. Cooking is one of my passions and cooking vegetables is even more so. As I mentioned before, this is my first time publishing this type of recipe, this time I bring you a very simple preparation, to accompany breakfast with a delicious arepa or bread. This is a pumpkin stew or pumpkin as they would say in other countries, accompanied by other vegetables to give the preparation a rich softness. For lovers of the vegetable world, I hope you like it and that from today we can share the experience of simple, nutritious and healthy cooking.

Sweet Potato Stew

Ingredients:
The vegetables we are going to use are two pieces of pumpkin, half a chayote, half a courgette and a medium-sized potato. As seasoning we will use two sprigs of spring onion, one and a half head onions, one and a half sweet chilli peppers, sprigs of coriander, ground cumin and salt to taste. For cooking we will use a splash of olive oil.

Preparation:
We select the ingredients and proceed to peel, wash and then finely chop them. We start with the seasoning, chives, sweet chilli and onion. And set aside.

Separately, remove the rind from the vegetables, wash and finely chop them, reserving them in a bowl.

Add the finely chopped seasoning to the frying pan and add the olive oil. We wait a moment for it to soften before adding the pumpkin, the chayote and the potato.

We must stir so that all the ingredients are integrated, we can also add a splash of water to speed up the preparation. It is important to stir every three to four minutes, covering the pan so that the vegetables can release their liquid. When we see that they have softened, add the courgette pieces, as it is the most tender vegetable.

Then add salt to taste, half a teaspoon of cumin and the finely chopped coriander leaves. Stir the mixture and cover. After about five minutes, stir again and it is ready to serve and enjoy. Enjoy!

Un saludo cordial a toda la comunidad Plan Power (Vegana). Esta es la primera vez que me encuentro entre vosotros compartiendo una receta de comida. Espero que a partir de ahora sean muchas más las ocasiones en las que podamos encontrarnos con temas saludables para todos.
Cocinar es una de mis pasiones y cocinar verduras aún más.
Como mencioné anteriormente, es la primera vez que publico este tipo de recetas, en esta oportunidad les traigo una preparación muy sencilla, para acompañar el desayuno con una deliciosa arepa o pan. Se trata de un guiso de calabaza o zapallo como dirían en otros países, acompañado de otros vegetales para darle una rica suavidad a la preparación.
Para los amantes del mundo vegetal, espero que les guste y que a partir de hoy podamos compartir la experiencia de una cocina sencilla, nutritiva y saludable.

Guiso de batatas

Ingredientes:
Las verduras que vamos a utilizar son dos trozos de calabaza, medio chayote, medio calabacín y una patata mediana. Como condimento utilizaremos dos ramitas de cebolleta, una cabeza y media de cebolla, una guindilla dulce y media, ramitas de cilantro, comino molido y sal al gusto. Para cocinar utilizaremos un chorrito de aceite de oliva.

Preparación:
Seleccionamos los ingredientes y procedemos a pelarlos, lavarlos y luego picarlos finamente. Empezamos con el aliño, cebollino, guindilla dulce y cebolla. Y reservamos.

Aparte, quitar la corteza a las verduras, lavarlas y picarlas finamente, reservándolas en un bol.

Añadimos los condimentos bien picados a la sartén y añadimos el aceite de oliva. Esperamos un momento a que se ablande antes de añadir la calabaza, el chayote y la patata.

Debemos remover para que se integren todos los ingredientes, también podemos añadir un chorrito de agua para acelerar la preparación. Es importante remover cada tres o cuatro minutos, tapando la sartén para que las verduras suelten su líquido. Cuando veamos que se han ablandado, añadimos los trozos de calabacín, ya que es la verdura más tierna.

A continuación añadimos sal al gusto, media cucharadita de comino y las hojas de cilantro bien picadas. Remover la mezcla y tapar. Pasados unos cinco minutos, vuelve a remover y ya está listo para servir y disfrutar. ¡Que aproveche!
