candied fruit of kolang kaling (Arrenga pinnata) with palm sugar flavor and benefits

Hello Vegan Lovers,today I celebrate Eid Al-Fitr, Eid Al-Fitr is one of the holidays for Muslims around the world, in addition to Eid Al-Fitr we also have Eid Al-Adha / Feast of Sacrifice. On Eid al-Fitr, usually we will provide a lot of cakes and sweets and pickles to welcome guests who visit our house.

Sweets and pickles are one of the favorite dishes of the Indonesian people during Eid al-Fitr, because they are fresh and appetizing. one of the many sweets provided by the host is candied fruit kolang kaling.

Kolang kaling fruit is an annual fruit that usually bears a lot of fruit in the month of Ramadan (I also don't know why it is widely available during Ramadan and approaching Eid al-Fitr).

The fruit of kolang kaling comes from the kolang kaling / palm tree. Kolang Kaling trees also produce nira water, nira water is a basic ingredient for making palm sugar.

Fresh kolang kaling fruit is white with a bland taste and chewy texture, therefore to enjoy kolang kaling fruit, usually kolang kaling fruit will be processed / cooked first before being served as a food dish, kolang kaling fruit is usually served in the form of sweets or an addition to drinks mixed ice and other types of drinks.

Usually I make candied fruit kolang kaling with various flavors such as rasberry flavor obtained by mixing kolang kaling fruit with Kurnia syrup, orange flavor by mixing kolang kaling fruit with orange flavored syrup, passion fruit flavor by mixing kolang kaling fruit with passion fruit syrup and kolang kaling flavor the original is kolang kaling fruit mixed with sugar.

But today I want to make candied kolang kaling with palm sugar flavor, I've made it before and the sweetness produced is fresher because it is made from palm sugar without the addition of artificial sweeteners.

Because of the holidays and the sweets that I make to serve to guests, I will make candied fruit of kolang kaling in quite a lot. The ingredients that I use to make candied fruit kolang kaling with palm sugar flavor are:

2 kg of kolang kaling
500 grams of palm sugar
200 grams of sugar
1500 mL water
pandan leaves (if not you can skip)

step by step to make candied fruit kolang kaling palm sugar flavor, namely:

1.put water in the pot

2.add palm sugar and sugar,

3.add pandan leaves, then cook until the water boils and all the sugar dissolves in the water.

4.wash the kolang kaling fruit with running water then drain it until the water content is reduced.

when washing the kolang kaling fruit, we also sort the kolang kaling fruit, if there is kolang kaling fruit that still has the epidermis, we can remove the skin.

5.after the sugar solution boils, add the kolang kaling fruit, stir until the kolang kaling fruit is mixed with the sugar solution, cook until it boils, then turn off the stove.

6.remove the foam that is on the surface of the sugar solution, this foam causes the taste and quality of the candied fruit of kolang kaling to be unpleasant.

7.let the candied kolang kaling fruit cool down, so that the sugar solution can be absorbed by the kolang kaling fruit, after it cools we can store the candied kolang kaling in the refrigerator in a closed container so that no fungi enter.

8.candied kolang kaling fruit is more fun to enjoy cold with the addition of palm sugar sauce, the resulting sweet and fresh taste will make us not stop eating it.

Besides being delicious, in 100 grams of kolang kaling fruit there are a number of nutrients in the form of: 243 mg phosphorus, 6 grams carbohydrates, 91 mg calcium, 0.4 grams protein, 0.2 grams fat, 1.6 grams fiber, and 0.5 mg iron.
