Today's lunch menu : Crispy oyster mushroom chili sauce (spicy, sweet and sour taste)

Hello Vegan Lovers, today the weather in my area is quite sunny, in the sky some clouds can be seen moving in the wind, at a time like this it seems appropriate when cooking a menu with spicy, sour and a little sweet taste to enrich the taste. That's why today I will cook a spicy, sour, sweet oyster mushroom sauce menu.

Oyster mushroom is a mushroom that has a fruity texture with thick flesh and a slightly sweet and fatty taste. Oyster mushrooms are rich in taste, easy to process into a variety of dishes. Therefore I will process oyster mushrooms by frying them, after that I will give them chili sauce with a spicy, sour, sweet taste. The spicy taste is obtained from the chili, the sweet taste is obtained from the sweet soy sauce and the sour taste is obtained from the tomatoes and the natural taste of the oyster mushroom.

This dish is more delicious when served with warm rice and cucumber as fresh vegetables.

Warm rice combined with spicy, sweet and sour oyster mushroom sauce will taste richer, especially when added with fresh cucumber salad, the taste is great.

The ingredients that I used to make today's lunch menu are divided into two parts, namely ingredients for frying mushrooms and ingredients for making chili sauce. I'll start with the ingredients for frying the oyster mushrooms.

The ingredients I use to fry the mushrooms are :

200 grams of oyster mushrooms, choose large mushrooms to make it easier to fry the mushrooms
2 tablespoons wheat flour for wet ingredients
7 tablespoons wheat flour for dry ingredients
1/2 teaspoon salt
2 candlenuts
2 garlic
1/2 teaspoon coriander
200 mL ice water
1 Pack of pepper powder
500 mL cooking oil

How to make crispy fried oyster mushrooms is :
1.Washing garlic, coriander and candlenut, then blend the garlic, coriander, candlenut and salt. I use a punctang and pestle to smooth all the marinade.

2.Mix the ground spices with 2 tablespoons of flour.

3.Add pepper powder according to taste.

4.Add ice water little by little until a dough that is not too thick is formed.

5.Slice the oyster mushroom into pieces like this,I don't throw away the stems, go with the flesh.

6.Clean the oyster mushrooms that have been torn,then drain to reduce the water content.

7.Dip the oyster mushrooms into the wet flour mixture, work little by little, so that the dough and mushrooms are perfectly mixed.

8.Then roll in dry flour, do this until the oyster mushrooms are covered with dry flour.

9.Heat the cooking oil until it's really hot.

10.Put the oyster mushrooms one by one into the hot oil, so they don't stick together.

11.Don't forget to flip the oyster mushrooms that are being fried, so that they cook evenly. Fry until golden yellow.

12.After golden yellow, then remove the oyster mushrooms, drain so that the oil is reduced.

Next is the ingredients for making chili sauce. The ingredients I use are :

75 grams of red chili
3 cloves of garlic
2 cloves of red onion
2 tomatoes, If you don't like the sour taste, you can use only 1 tomato.
3 tablespoons of sweet soy sauce
1 tablespoon of salt
1 cucumber as a salad

Previously I had peeled the skin of the onion and garlic, I had also removed the red chili stalks.

How to make chili sauce :
1.Wash red chilies, onions, garlic and tomatoes, then puree in a blender.

2.Heat 3 tablespoons of cooking oil.

3.Add the chili sauce, stir-fry until it boils.

4.Add salt, stir until combined.

5.Add the sweet soy sauce, stir again until combined and then cook the chili sauce until it boils.

6.When the chili sauce has boiled and the water content begins to decrease, I add the fried oyster mushrooms, then stir until evenly distributed.

IF YOUR FRIENDS LIKE CHRISTIC AND DRY Oyster Mushroom Sauce, then add the fried oyster mushrooms into the boiled and dry chili sauce. We as a family prefer the taste of oyster mushrooms with half-dried chili sauce, that's why I put the fried oyster mushrooms into the boiling chili sauce and didn't wait for it to dry.

For the salad, I used a cucumber that I cut into several pieces.
