Getuk, traditional east java cake

Today I will share a traditional cake recipe called Getuk.

The main ingredient that I will use to make getuk is banana. I will look for bananas in the garden, in my garden there are many bananas.

I will take the two top banana combs. I took two small banana combs totaling 26 pieces.

I will put the banana on the ground, so that the sap is reduced.

After the sap is reduced, I will start cultivating it.

Getuk is a traditional cake which is usually made from cassava. but in the city of Kediri, East Java province, Indonesia, Getuk cakes is made from bananas. The bananas used are plantains or jackfruit bananas. Getuk cakes from the city of Kediri use plantain or half-ripe jackfruit bananas because of their hard texture and sweet taste with a combination of sour taste.

Getuk cake has a sweet and savory taste, the sweetness comes from bananas and palm sugar, while the savory taste of Getuk comes from a sprinkling of grated coconut.

Getuk cake typical of the city of Kediri uses half-ripe bananas that start to soften, the bananas are processed with a mixture of sugar or palm sugar, then wrapped in banana leaves, similar to a sticky cake. The difference is that the lemet cake is steamed again after being wrapped in banana leaves, but the getuk cake is not steamed, it can be eaten directly with a sprinkling of grated coconut.

Today I will make getuk cake using raw bananas, the bananas I use are jackfruit bananas. I prefer to use raw bananas because of their chewy texture and sweet and sour taste. if I use a banana that is already soft, it tastes very sweet and I don't like the taste that is too sweet.

PREPARATION
Cut both ends of the banana to make it cook faster when boiled, then wash clean.

I used 1.5 L of water and a tablespoon of salt to boil the bananas, you can use the amount of water according to the number of bananas, the most important thing when boiling the bananas must be completely submerged in water.

Put the bananas and water in a saucepan, then boil the bananas until they are soft. When the bananas are ripe and yellow, you can steam them.

After 25 minutes I boiled it, it turned out that the bananas were not ripe, there was still a lot of banana sap floating on the surface of the water. Maybe because the bananas are still raw and the skin is still hard, so it takes more than 25 minutes to boil the bananas.

After I boil it for 40 minutes, the bananas start to ripen, marked by peeling banana peels.

After the bananas are cooked, then drain so that the water is reduced.

The ingredients I use to make the getuk cake are :
raw bananas that have been boiled until soft 26 pieces
palm sugar or brown sugar 150 grams grated coconut from 1/2 coconut (when grating the coconut, only take the white part)

The method
1.Slice the palm sugar as thin as possible so that it's easy to grind.

2.Peel the banana skin while it's still hot.

3.Put the bananas and palm sugar into the pounder, I use a mortar and pestle.

We have to mash the bananas while they are still hot, when the bananas are cold then the getuk cake will be difficult to shape.

4.After the boiled bananas and palm sugar we mash until smooth and the two blend together, then put it in a container, leave it for 20 minutes until the Getuk cake hardens.

5.the getuk cake begins to harden and can be shaped, sprinkle with grated coconut. The taste is very delicious, imagine the sweet, chewy and savory grated coconut together.
