I call this recipe nkwobi noodles, because it is prepared with the exact method nkwobi is prepared.
Nkwobi is a locally prepared delicacy, made with cow feet and red oil ,with some natural spice.
I decided to give it a twist. I decided to prepare it with noodles (everyone's delight).
It wasn't just sweet,it was superb. The flavours, the texture,the taste, everything was just excellent.
If you served this with palm wine, you will forever remember this day.
Let me show you how I made it
- 200g of noodles
- Half cup of red oil
- Quarter cup of ngo
- 1 large piece of onion
- Natural spice ( blended)
- Salt to taste
- 4 piece of red pepper
- Enough water for cooking
It took me less than 5 minutes to prepare this noodles. It's very simple and fun.
Let's make it together.
I started by slicing my onions, I sliced it into tiny shapes and left some big and long. That's for decoration purpose
I also gave my red pepper a nice slice,after washing it. I made sure it was tiny but I also left some round for decorating my finished product.
I know that, you might be wondering what this liquid substance that I called ngo is.
Well it is a mixture of palm fruit leaf ashes with water.
I purchased the ngo from the market,I didn't make it myself otherwise I would have showed you how it's been done. But it's just burnt palm fruit leaf ashes mixed with water.
The spice is a natural nkwobi spice (all blended)
After slicing my veggies, I boiled 2 cups of water, then add my noodles to the boiling water to soften.
While it was boiling, I added my sliced pepper. This is so the noodles can adsorb the pepper , you can add small spice here too.
Now the noodles has soften, I transferred to the sieve. This way, the excess water will be drained out .
This is where the magic happens, you no longer need heat. Every other thing is done without boiling or frying.
I poured my half cup of red oil into my pot (you can use bowl ). Then add my ngo and stirred it using my wooden spoon (remember: do it off heat)
The more you mix the ngo with the oil, the oil gets conjured, the oil become very thick
Now add the natural blended spice, add salt and stir all together.
Also add the onions and any remaining pepper except the ones for decoration.
Stir everything together, taste for salt. Now add the noodles and stir. Make sure all the ingredients are well mixed with the noodles.
Right now everything is ready. You don't need to heat up a little, Just stir it very well and serve.
I thought of how best to serve this amazing recipe, and I came to the conclusion that serving a locally prepared delicacy in a local way, is the best.
So I wrapped a mortar with plantain leafs and served this beauty. I also served with a small saucer too.
This recipe is superb, you can trust me.
The locally prepared noodles taste really amazing.
