Last Sunday we had a bit of rice left over. And we all know what you do with leftover old rice. You fry it and make fried rice. So that's exactly what we did. Before starting the ingredients had to be decided and some had to be gathered from the garden. Our garden is not giving much with the heavy rainfall now, but it's enough for two people. So first I went to harvest some of the chilies. The small ones are finally blooming all over the place. And the yellow ones are hotter than expected. Had to find that out the hard way.
So after picking the small chilies, I chopped them up along with an onion. Garlic is always pre-chopped and ready by Tanja, so no preparation needed there. And of course the old rice was taken out of the fridge.
I then fried up the garlic, onions and chilies.
Then I threw the rice right on it, not wasting any time in the process.
After that I threw in some oyster sauce, sesame oil and dark soy sauce, which gives the fried rice its brown color. I mixed everything up and realized something was missing.
But no worries, that was fixed in an instant. Of course no fried rice is complete with some green onions, which we conveniently grow on the front porch, where that snake visited us last month.
After cutting and adding the green onions, the rice was fried and ready to eat.
We had leftover pickled greens and chicken which was a nice addition to the main course. And this is what it turned out like:

There is something that the Chinese put in their fried rice that makes it extra tasty. I have come to realize it is lard , but who needs that shit in their system.
Why not though, if it tasted good, it's not a problem, as long as it is in moderation.
