But I understand what you're saying. And yes, I am aware that some thing I cook or eat are inherently vegan. Of course I can take a vegetable and cook it and say I made a vegan dish, but to elevate it to the next level and with different added "vegan" ingredients takes time to learn and experience. I can learn to do it, I just haven taken the time to do so. Whenever I cook I always try to go for that elevated level of a dish, so that's why I said I wouldn't dare. :)

I often cook only rice and vegetables when I don't feel the need to defrost or marinade something or do the extra work. I also know from vegan colleagues that their only real struggle with nutrients is the lack of B12. But other than there shouldn't be a problem with such a diet.

Very true, a good B complex vitamin daily is wise for most vegans. I also take a small bit of added iron every second day, because I don't eat as much spinach as I should! Leafy dark greens are pretty incredible for nutrition, but sometimes I don't feel like a rabbit :P
(For immune boost I also take vitamin C and D, and some zinc for fighting off viruses.)

Avocado has a bad rap (associated with annoying liberal soyboys for some reason), it's really an incredible source of proteins and fats. Everything you want and nothing you don't. I like it sliced on rice or quinoa, but it's gotta be just ripe enough and not too ripe! It's amazing we can get them all the way from South America and Mexico up to Canada and have them ready for the 3 or 4 days they're at their peak.

Lol, I can't take anyone who does not like avocado seriously.
People with that kind of negativity should stay far away from me. 🤣
