Hello fellow Hivers!
This past week was the Thanksgiving holiday in the US, which is primarily centered around two major aspects - gratitude and food, lots of it.
I traveled home for the holiday and got to see family and friends in multiple gatherings and so I thought I'd share some of the meals we had. Before we get into it though, in the true spirit of Thanksgiving I want to extend my gratitude to all of you who have been following along on my Hive journey. I know it has mostly centered around Splinterlands but as I explore more of Hive it is so great to see so many people sharing cool parts of their lives. Thank you for being a part of my journey and I'm grateful to be a part of yours!
So let's get started, I'll share 3 meals based on the gatherings with both sides of my family as well as a friends group that I have known for over 20 years at this point.
This first meal was on the day itself and had a traditional turkey. My aunt cooked it and it was honestly one of the best turkeys I've ever eaten. Her secret ingredient is calamansi, a citrus fruit from the Philippines. It adds a tangy flavor that gives a powerful kick and keeps the meat from getting dry. Other sides included sweet potatoes and green bean casserole but the turkey was the main attraction.
The second meal was the one with my friends group who decided to make things easier this year and cater the meal. We ordered from a local Thai restaurant we all used to frequent growing up so there was an element of nostalgia that made the food taste even better. My favorite dishes were the Pad Thai and Cashew Chicken but you can also see that someone snuck in some mac and cheese leftovers!
The final meal of the weekend was with family again and I decided to try my hand at making some turkey - with a bit of a spin! For anyone familiar with butter chicken (chicken makhani), I swapped out the chicken for turkey and loved how it turned out. Maybe I'll do a separate post with the recipe I used if people want to give it a try themselves. Other highlights from the meal were some catered rice and kabobs as well as you guessed it - more mac and cheese. You really cannot get enough of it during the holidays!

The Philippines have a rich blend of culture when it comes to food. As for that Turkey, your Aunt did a tremendous job with that one. Happy Thanksgiving in arrears.
