Vegetable Mix Pickles: Another Value-Added Product Fresh from Our SUGBUsog Garden

Hello! Have a nice and wonderful day to all Hive friends all over the world and most especially the very supportive and kind people in this community. In my previous blog, I already shared my recipe for one of our first Value-Added Products that came from our SUGBUsog sa Eskuylahan Garden. This time I will be sharing another recipe for our SUGUBUsog entry.

Value-Added Products are uncooked or raw fruits and vegetables or farming products that were enhanced to increase the market demand or to extend the shelf life. Examples of these products are mango jam, jackfruit jam, marmalade, candy, pickles, dried and others. In our case, I prepared Vegetables Mix Pickles since we have a lot of vegetables that can be harvested from our SUBSUsog sa Eskuylahan Garden. Sometimes we already got bored of eating vegetable soup, therefore we decided to modify our way of preparation.

PREPARATION

As usual, the first thing to do in food preparation is to prepare all the ingredients, materials, tools, and equipment needed.

INGREDIENTS

  1. 2 pcs. carrots
  2. 2 pcs. along or eggplant
  3. 5 pcs. string beans
  4. 1 pc. singkamas
  5. 2 cloves head garlic
  6. 1 head onion
  7. I pc. Bell pepper
  8. 2 cups sugar
  9. 2 cups vinegar
  10. 1 pinch salt
  11. 1 pinch of white pepper
  12. Ginger

Procedures

  1. Wash vegetables before slicing and pairing. This is the usual thing we do in food preparation.
  2. Cut all vegetables in julienne cuts or long thin cuts.
  3. Slice bell pepper, ginger, and garlic.
  4. Blanch vegetables in just a few minutes.
    (Blanching is a process of dipping vegetables in hot water and then soaking them in cold water to retain their crispiness.)
  5. Set aside

Sauce Preparation

  1. Measure 2 cups vinegar and 2 cups sugar or a 1:1 ratio.
  2. Dissolve sugar by boiling the sugar and vinegar solution.
  3. Add all the spices.
  4. Remove from fire. Let it cool.
  5. Pour the sauce into a vegetable mix. You may add a little white pepper or salt if you like.
  6. Place or Pour it in your desired container.

Pickle is one of my favorite side dishes. It adds appetite to a meal. Vegetables also contain a lot of nutrients and vitamins that our body needs for growth and development. So if we have plenty of harvested vegetables in our garden, let's make these into pickles to prolong the shelf life of our vegetables or to avoid rotten and becoming waste.

I had no idea you could also make pickled eggplants. How was the texture of the eggplant after it got permented?

Oh, it's good. Soft but nice to eat.

This is the first time that I see a pickle with these kinds of ingredients Ma'am. Mostly po kasi papaya pickle lang and ankikita ko po. Thank you for sharing Ma'am it's new for me kaya I am excited to try it too :)

Oh really @teacherlynlyn? There are varieties of vegetables that can be made into pickles aside from that you can have sayote too. Try mo!
