Today I am going to share about My Chocolate Cake!
Yes!! I am so happy to share it all to you ladies and gentlemen. If you love chocolate cake, this cake is the best.
It's really been a long time since last time I made a cake, because my focus now is on other kitchen stuff that is also so yummy to fill in our stomachs.
Anyway, I will tell you a little story... As a Filipino worker here abroad I love to share what I know, specially concerning food because its really my passion. So it happened that I had a friend who knew already that I make cakes as very long time ago during pandemic it was my way of treating myself to be happy. I wanted to learn some stuff that made me feel busy and yet was enjoyable. So this friend of mine trusted me so much. Hehe... she called me to make a cake for her. That was a Thursday dated February 20. She ordered a cake because of her birthday! You know at first I doubted myself if I could make a good one. But nevertheless, I agreed to accept her order. So I was making a cake for her! But the good thing is that fell in love with the cake as it turned out to be so yummy, hmmmm...
Anyway, I believe this, I don't know if you also believe it, but one chef always said that a happy heart always makes a good food. And I noticed that myself, too. 😉
So here's the cake!
And it has simple ingredients:
2 cups (240 g) of cake flour
2 cups (396 g) of sugar
3/4 cup (63 g) unsweetened cocoa powder
2 teaspoons (8 g) baking powder
1 1/2 teaspoons (9 g) baking soda
1 teaspoon (2.8 g) kosher salt
1 teaspoon (2.3 g) espresso powder, homemade or store-bought
1 cup (227 g) milk, buttermilk, almond or coconut milk
1/2 cup (99 g) vegetable oil or canola oil or melted coconut oil
2 large (100 g) eggs
2 teaspoons (9.4 g) vanilla extract
1 cup (227. g) boiling water
Chocolate Buttercream Frosting Recipe
Instructions:
For the chocolate cake:
Add flour, sugar, cocoa, baking powder, baking soda, salt and espresso powder to a large bowl or the bowl of a stand mixer. Whisk through to combine or stir through flour mixture until it's combined well.
Add milk, vegetable oil, eggs and vanilla to the flour mixture and mix it together on medium speed until well combined. Reduce speed and carefully add boiling water to the cake butter until it's well combined.
Distribute cake butter evenly between the two prepared cake pans. Bake it for 30-35 minutes, until a toothpick or cake tester is inserted in the center of the chocolate cake and comes out clean.
Remove from the oven and allow it to cool for about 10 minutes, remove it from the pan and let it cool completely.
Oven Instructions:
Preheat oven to 350 ºF (about 177 °C). Prepare two 9-inch cake pans by spraying with baking spray, buttering and lightly flouring or brushing them with homemade chocolate pan release.
