PORK N BEANS STEW

During rainy season my grandmother used to cook pork n beans stew with vegetables specially in Baguio where the weather is cold. So mouth watering and so delicious when serve hot.

There's a different versions of cooking this kind of recipe that I cook, but I just made the simple one since vegetables are too expensive here in Manila.

Let the fun begin!

Ingredients:
1 kilo pork meat bones (I used feet)
1/2 part of chinese cabbage - wumbok
1/2 part of repolyo cabbage
1 stalk of celery - slice half inch in size
1 cup white beans
2 big tomatoes - chopped in big chunks
quarter cut of ginger
1 big bulb onions
6 pcs of garlic
4 leaves bay leaf
1 knorr pork cube
1/8 cup patis
1/4 cup oyster sauce
1/4 tsp turmeric
1/4 tsp paprika
1/2 crushed black pepper / whole
250ml Hunts tomato sauce
5-6 liters water

Procedure:

  1. In a pressure cooker pot put 5-6 liters of water, ginger and the pork bones together, let it boil on high heat. When boiling remove the lumps (latak) of the pork on top.

  2. Now add bay leaves, white beans, black pepper, 1 bulb onion. cover the pressure cooker and let it cook for about 15 min to 20 min on high medium heat to soften the pork and beans on a short period of time.

  3. Make sure it whistles at least 3 to 5 times. To check, off the fire, slowly remove the pressure cap so that heat pressure will come out, not the lid cover otherwise it can cause accident.

    You don't want to get messy all over the kitchen, burn yourself of hot liquid from pressure cooker and the meat might got stock in the ceiling floor. Once the pressure is out put the pressure cooker pot on the running water for a couple of minutes at least 3 minutes just to be sure to cool it down. Turn off the running water and carefully open the lid cover.

  4. Check the beans and pork if it soft according to your desire.

  5. Put it back to stove on medium heat,add patis, knorr pork cubes let it boil and stir occasionally.

Fry the Following Ingredients:

  1. In a small frying pan, saute the garlic, some onions, some ginger, celery and chopped tomatoes on medium heat
  2. Add paprika, turmeric, oyster sauce together. Saute this for at least 3-5 minutes just to let all the ingredients, juice and aroma mixed well then pour it all to our pork in beans cooking pot.
  3. Then add the 250ml tomato sauce. Slowly stir everything while boiling, try also to adjust the heat. Give some taste if you want to adjust according to your desire of taste.
  4. While stirring, be sure to also add water if you think your stew having less water. Then adjust the taste.
  5. Lastly add the repolyo and chinese cabbage, let the hot stew soup of pork and beans cook the vegetables half done to well done but not over cooked vegetables. Stir well then serve hot.

You can also garnish spring onions.

Note:
Use pressure cooker pot to make the pork and beans soft in fast cooking method. If you don't have one, soak the beans in the water at least 2hrs
then cook in ordinary pot, let it boil together with the pork at least 30min then transfer cooking in charcoal for 3hrs to save gas.

Cooking time:
Pressure cooker - 1hr
Stove / Charcoal - 3hrs
Serving - 4-6 persons

yes super tender and soft... bones drops away from tendons and meat! I cooked 8 servings, thinking I have companions here but I'm just solo eating ^_^😄

Nice one. Betsuelas is a favorite here among the Ilongos and my eldest son's favorite though he doesn't like the veggies. I will take note on this. Thanks for sharing.

I'm the Opposite ^_^ I eat more veggies as long it is half or well done, not over cooked. I like the crunchiness of the vegetables. I grew up in highland kaya matakaw ako sa gulay... you can add potato and carrots as well.😊
