Pork adobo is like a soul food~ It's easy to cook and everybody loves it. I don't eat the fat part too. Actually, I tend to choose meats with little fat for my adobo, but true, fat adds to the flavor.

I find there's a difference with the fat part in the PH compared to here in France. I can still remember how soft and melting the part of the tambok sa baboy sa Cebu. Haha! Pero dinhi kay bidli na. Lami pa kaayo ta modaginot sa tambok if pobre ta kay gutom kaayo.

Limpyo man dinhi but i think it's the cold weather that makes it BIDLI. hahaha! kana bitaw ang fat murag mo solid sya.
