I've always enjoyed drinking Ginger ale but never thought about making it! Looks reasonably straight forward? If you let it ferment too long, and you lose the sugar to the yeast, does the alcohol take a lot away from the flavour?

It depends on how much sugar you start with, and how far you let it go. The alcohol replaces the sugar, so it will get less sweet every day. I've never let any go until the alcohol reaches a level where you could get drunk by drinking it. I'd guess at that point the flavor would start to become more of a ginger wine.
