Necessary Ingredients
To create the perfect cendol dawet flavor, you will need a few key ingredients:
- 5 spoons of rice flour
- 10 grams of plain jelly
- ½ teaspoon salt
- 65 ml coconut cream
- 7 pandan leaves
- 300 gram sugar
- 500 ml water
Making Steps
1 Making Cendol: First, prepare a saucepan and mix rice flour, salt and jelly with 400 ml of water. for pandan leaves, blend 7 sheets to give a greenish color to the dough then mix with the dough and stir until evenly distributed. Then, cook the mixture over medium heat, stirring constantly until soft & thickened.
2 Shaping Cendol: After the cendol mixture is cooked, pour the mixture into a cendol mold or a fine sieve if you have one, here I use ice plastic to mold the cendol. Press the mixture so that it comes out in small granules. Let the cendol cool and harden.
3 Making Coconut Milk: Next, prepare the coconut milk. Bring the creamy coconut milk to a boil along with 2 pandan leaves that have been tied in a knot. Add a pinch of salt for flavor. Cook over low heat to prevent the coconut milk from breaking, then remove from heat and let cool.
4 Preparing Sugar Syrup: In a separate pot, dissolve the sugar in 500 ml of water and bring to a boil. Add the remaining pandan leaves for a more fragrant aroma. After that, remove from heat and let cool.
5 Serving: Take a serving glass, place the molded cendol, pour coconut milk on top, and pour sugar syrup to taste. You can add shaved ice for extra freshness.
