Have you tried modded Minecraft like FTB Revalations (a Feed the Beast Variant?). If you're finding that you're bored with the vanilla version you may want to check it out. Adds a whole bunch of content.

Right now I'm playing Hypixel SkyBlock online and it was somewhat interesting at first but now it's pretty much grinding these materials to get this recipe, then grinding those materials to get that recipe, and so on.

Ohhh. I will say FTB can be a grind mod because it adds so much (bees!, Botania, computercraft, even magic). Alas, it doesn't sound like it's what will do the trick to get you reinvigorated with the game. I trialed a Skyblock mod for a bit and found it wasn't "mah thang" for similar reasons that you already mentioned.
