Because the yam, Dioscorea hispada species in particular have an intoxicating properties if not prepared well.

Yup. The process involve is squeezing the juices from the grated root crop as this is where the intoxicating properties can be found then they wrap the grated root crop in cloth bags and place them on running water for several days so the juices will be further wash away.
