Coffee beans are harvested from the coffee plant and then dried in the sun. Then it is bagged and sold as a green bean. I take the green beans and put them into my roaster and run the roaster and they become toasted and brown. Once they've reached the optimum color, the cycle ends and I bag or put into air tight canisters. I actually drink decaf and my husband drinks fully caffeinated. We are seriously spoiled because it is so fresh.
