The Christmas Snack of Pinoy - Bibingka

Hello Photography Lovers! I'm back and here's what I mentioned in my last blog about the Spirit of Christmas here in the Phillippines. There are two Christmas Snacks of Pinoy, and for this blog, I will share with you the first one and we called that Bibingka. Bibingka is like a special pancake, the taste is more sweet and creamy and it's more fuffy than the ordinary pancake, and there is also a little bit of saltiness because of the toppings of melted cheese and slices of salted duck egg.

This snack or cake is only cooked and sold from September to December of the year, in short, ber months. Why? Because ber months are starting to cold the weather and this cake serve hot along with hot tea. So with the cold weather, it's a perfect combination with hot snacks and hot tea.

Okay, done with some introduction. I'm gonna show you now the tools on how to cook it. Cooking this kind of cake is traditional. You need to use a pot and charcoal to cook it. Then there are 3 layers to cook it perfectly. In the first layer, you just need a base pot with a center hole, so this kinda bigger one to put more charcoal and that charcoal will need to burn to cook the bottom part of the cake. In the second layer, when the charcoal is already burning, we can now put the middle part over the base pot, this is the main pot with banana leaves to easily remove the cake from the pot when it's cooked, this will also serve as the pan of the cake. And last, the 3rd layer, the steel-like pot, this layer has also burning charcoal over of it and this will cover the main pot to cook the upper part of the cake.

After you see the tools and way how to cook them, I will now show you the Bibinka itself. As I mentioned in my introduction, this cake has a combination of tastes, and to get that perfect taste you will need these recipes to cook it. The main and common ingredients of this special cake are; rice flour, glutinous rice flour, baking powder, sugar, egg, melted butter, and all-purpose cream, butter for greasing. For the topping (this is the one that gives the salty flavor of the cake); sliced salted duck egg, and melted cheese.
