Buckwheat Pancakes and Berry Jam

Hello darlings,

Did you ever feel being sick of the same breakfast recipes and ingredients and simply don't know what to prep anymore? If it doesnt sound like you, well, it happens to me very often. And I don't like it! I used to be way more creative in the kitchen years ago...and had more energy to search for breakfast ideas! Now...we just go with the flow and the days coming one after another see what they bring....(if it's a buzy day then brekafast will be something nutritious, savory and satious like eggs, veggies, cheeses and some fruits maybe. )

It's just that with kids, if you give them too much of a thing, they'll hate it. I'm not talking about cereals and milk though or stuff like these. Full of sugar which create addiction in kids.
In my opinion, the cereals you buy in the supermarkets plus milk it's a VERY low nutrition breakfast combo for a kid. Not to mention that the milk bought from supermarkets is doubtful because it's hard to find a good source, if that even exists.

Better breakfast options to give kids are: eggs, veggies, fruits, whole milk coming from local sources, yoghurt, porridges made of whole cereals like oats, millet, quinoa, etc.

I used to do a lot of pancakes over time for my kid, Caleb. All kind of recipes. Keto, Whole wheat, Vegan, Sugar free, With yoghurt, without, with/out fruits, with almond flour, with coconut flour, with cinnamon and the list can continue....but he's not into them anymore. I guess it's a period for him when he's just over it. I'm not saying he wouldnt eat them if I prepapre some, but he wouldnt ask me to make pancakes. Maybe thats because I made them too often.

These days I'm trying to prepare for my family a savory breakfast instead of a "sweet-ish" breakfast. We're more likely to have eggs, veggies, hummus, whole fruits, yoghurt, cheeses, bacon or some homemade delimeats instead of oatmeal, cereals, pancakes, porridges.

Eventually, I was inspired to try this recipe out as I wanted to add diversity to our pancakes and also, adding some other nutritional foods on our plate.

I dont eat Buckwheat as much as I'd want too, and when I saw this recipe, I thought....well, this is a start!

Buckwheat is a great source of fiber, minerals and vitamins. It's also gluten free, which makes it a good choice for those who cant have gluten. I had buckwheat sourdough bread from my friend and it tastes really delicious.

The recipe is not mine, I am not that inventive when it comes to baking or dough and anything to have flour in it; not even pancakes. However, to be honest, many times I used whatever I had in the fridge and they turned just fine. I think pancakes can be an easy recipe to adjust based on the ingredients we like or have.

So here is the original recipe. I tried it out, it's good. The pancakes are really nice, but you have to eat them right on the spot. They turned....unwanted the other day. The texture wasnt great anymore. They felt hard and "sandy", if you can use this word to a food. 🤓


Ingredients

Dry Ingredients:

  • 1 and 1/2 cup Buckwheat Flour
  • 1/4 teaspoon Baking Soda
  • one teaspoon Baking Powder

Liquid Ingredients:

  • 1 and 1/2 cup Almond Milk ( I had Coconut&Rice Milk)
  • 2 tsp Apple Cider Vinegar
  • 2 Tbsp Brown Rice Syrup - or maple syrup or any liquid sweetener
  • one tsp Vanilla
  • one Tbsp Coconut Oil - melted

INSTRUCTIONS:


If you dont have buckwheat flour, its easy to do it yourself. You just need a good blender/food processor.
I have a Vitamix which has a Dry Container; this is bassically a grinder, a very powerful one. I can do any flour I want in it.

In a mixing bowl, whisk together all liquid ingredients: milk, vinegar, syrup, vanilla, and oil.

In another bowl, stir together all dry ingredients: buckwheat flour, baking soda and baking powder.

Make a well in the center and pour the liquid ingredients in the middle.
Whisk until you have a nice smooth, thick batter with no lumps.

I used a skilled to do these pancakes, but if you have a pancake griddle, the original recipe says to use it.

Add a little bit of coconut oil and start cooking these until bubbles form on top and then flip on the other side.

Serve with toppings of your choice, like maple syrup, butter, yogurt, fruits.

Making the Sauce

I preffered to serve these with homemade berry jam.
I have a lot of berries, year round; thats because I freeze them for the cold seasson.
Easy jam in just a few minutes. Put berries in a skillet or a pot. Add coconut sugar (or regular one, brown sugar) and let it boil for a few minutes, stirring occassionally.

I tried this recipe also because the ingredients are very few and on hand. Not to mention that in just a few minutes the dough is mixed and ready for making your morning pancakes. 🥞.
If there isn't enough time for you to make the berry sauce, just skip it. Add another topping you have around or serve them with fruits, jam, honey, etc.

They are just fine if you eat them right on the spot. If you let them rest too long, or for tmr, then they arent something you'd want to have...they get a littlr bit too hard after some time.

This is something that I need to try on my end too. Especially since we gave up on sugar for already a while and are always seeking new and healthy recipes to try out :)

We didnt give up on sugar completely, but for us its a lifrstyle in years to have as less sugar as possible.

Yesterday I made some blackberry muffins, so sooo good. Too bad I didnt take any photos to post the recipe. However, this contains 4 tbsp of brown sugar. 😊

I wanted to upvote this. I really did. It's so well written with fantastic presentation but...

When I was a kid every Sunday we had pancakes for breakfast.. until one day after going to the feed store we came home with some Buckshot flour and better yet .... it was free.. but when we made pancakes with it... it ruined them.. all the feeling like you were getting away with something by having dessert for breakfast was gone. My childhood? Ruined.
